Quinoa Balls with Bergamot Fragrance

A fresh, flavorful dish that can be served as either an appetizer or a main course is the quinoa balls with Bergamot.


  • 150g quinoa
  • 90g rice flour
  • 1 onion
  • 1 carrot
  • 1 zucchini
  • Bergamot juice to taste
  • Pepper, salt, and parsley to taste
  • 1 teaspoon of turmeric


  1. First, rinse and clean the quinoa, then boil it in a pot of water until fully absorbed.
  2. After draining, chop the onion, peel and grate the carrot and zucchini.
  3. Sauté the three vegetables with the addition of two tablespoons of extra-virgin olive oil, salt, and pepper. Once crispy, mix in the quinoa, adding flour, parsley, turmeric, and two tablespoons of Bergamot juice.
  4. Knead until the mixture is homogeneous to shape it as desired.
  5. At this point, bake at 180°C (356°F). When the balls are crispy, turn off the oven and let them rest for a few minutes before serving.
